Treats from the garden

My friend Anni recently sent me a copy of her latest cookbook, Ice Pop Joy, and my children have since been studying every single recipe and making shopping lists for me.  I’ve never seen them so excited before over a book of recipes!   This book has so many creative and healthy recipes: popsicles containing everything from tofu to quinoa in yummy frozen combinations that kids will eat!  As soon as I got a turn to look at it myself, I knew that I wanted to try a couple of the recipes that would use what we have available in our garden right now:  strawberries and spinach. 

Our strawberries started ripening a few days ago and I finally had a chance to pick enough for popsicles over the weekend.

We have loads of spinach right now in all stages from small plants to the ones I planted last fall that are bolting now.  I don’t want to waste any of it!

The first recipe we made was the Green Machine, a yummy combination of pineapple, raw spinach, bananas, and ground flaxseed.  
These were a huge hit and were so good for us too! I drank the leftovers, a perfect green smoothie!

 

But, I was really most excited to make popsicles out of our strawberries!

I made, “Pure Sunshine,” a mixture of strawberries, lemon juice, mint, and a touch of natural sweetener.

(We’ve really been enjoying these bpa free “Groovy Pop Molds.”)

Everyone loved these too, although some of my kids liked the spinach popsicles better!
(Pay no attention to the giant mess on my back porch.)
I’m thinking that our summer is going to be full of Ice Pop Joy!
